Sencha, a special type of Japanese tea, is obtained by first steaming carefully collected tea leaves for 15-20 seconds, then rolling, heating and drying. The first harvest, which covers April and May, is generally known as the most delicious Sencha.
Sencha tea, which has a stronger and even slightly bitter taste when brewed with very hot water, has a mild taste when brewed with water at lower temperatures (for example, at 80 degrees water temperature). You can determine the brewing temperature yourself according to your taste.
